When I was a kid living in Saigon, I used to love this stuff. The squids (the flat triangular shapes under the plastic cover) are quickly reheated to a brown burn on the charcoal (the lady is doing just that in the photo,) then it is passed through once or twice in the hand press (to her right.) The now cooked and still hot squid comes out flattened, soft and very chewable. It is eaten with the hoisin sauce (in the plastic bottle with the yellow cap) and hot pepper (inside the platic bottle with the red cap.) It is eaten in the street.
