I should know all of this but for some reason I can only identify maybe three out of five. Let's see: Top row on the right is nước mắm (seasoned fish sauce); bottom row on the left is nước tương (soy sauce); bottom row on the right is muối tiêu chanh (s&p w/ lime). The sauce on the left of top row looks like is soy sauce w/ wasabi and the one in the middle of the bottom row is sriracha w/ hot mustard?
